Ingredients:
- 1 kilogram beef or mutton (cut into large chunks)
- 1 kilogram Basmati rice (Preferred long grain rice )
- 1 cup oil/ Ghee
- 3 medium carrots (julienned)
- 1/2 cup raisins
- 2 tablespoons sugar
- 2 medium onions (thinly sliced)
- 4 cloves garlic (minced)
- 2 teaspoons cumin seeds
- 2 teaspoons coriander powder
- 1 teaspoon cardamom powder
- 1/2 teaspoon ground cinnamon
- Salt (about to taste)
- 1/2 cup sugar
- 2 teaspoons black pepper or (about to taste)
- 4 tablespoons vegetable oil (or ghee)
- 1/4 cup slivered almonds
- 1/4 cup pistachios
Instructions:
Step NO 01:

Prepare the Meat. Take a large pot, add one cup of oil or ghee, and place on high to medium flame. after heating the oil/ghee, cook the one kilogram of beef or mutton (cut into large chunks) until brown the meat is brown on all sides. ad the two medium thinly sliced onions and cook for five to ten minutes until golden brown. add four cloves of garlic (minced) and cook for another minute.
At this stage, add Salt (about to your taste), 2two teaspoons of cumin seeds, two teaspoons of coriander powder, one teaspoon of cardamom powder, and half a teaspoon of ground cinnamon and mix well all ingredients. Add water and cover to bring a boil and simmer until the meat is tender and juicy it will take on to two hour. When your meat is tender and juicy, remove the meat from the pot and set it aside meat and broth separately.
Step NO 02:

Prepare Carrots and Raisins. Take a separate pan, pour the oil, and place on a high to medium flame. after heating the oil, add three medium carrots (julienned), and half a cup of sugar and cook for up to ten minutes or carrot until softened. Then add half a cup of raisins and cook for five to ten minutes more. and then set aside, now your carrots and raisins are prepared for kabuli pulao.
Step NO 03:

Make kabuli pulao in traditional style. First, you have to prepare the rice for kabuli pulao. take a large pot to wash the rice. Rinse the one kilogram of basmati rice (Preferred long grain rice ) until the water runs clear. take another pot to make the kabuli pulao in traditional style. Add broth in a pot and place on a high flame to bring to a boil Add one kilogram of rinsed basmati rice in a boiled broth, cover the pot, and simmer until the rice is almost cooked.
Now your final touch is to assemble the pulao first, you have to mix the cooked meat into to the rice then give the layer of already prepared carrot and raisins over the rice. when you assemble the rice properly cover the pot and cook low flame for “dum” up to fifteen to twenty minutes for rice fully cooked and meld the all flavor in to the rice. The “dum” process is very important to allow all the flavors to combine.
Step NO 04:

Serve. garnish with 1/4 cup of slivered almonds and 1/4 cup of pistachios to give the best traditional touch. Now, you have a homemade Kabuli Pulao is ready in traditional Style. Serve the kabuli pulo hot to your family or friends.
