Ingredients For the Yakhni (Broth):
- 1 kilogram beef (with bone)
- 5 cups water (or as need)
- 2 medium onion (chopped)
- 2 inch ginger (sliced)
- 6-8 cloves garlic (crushed)
- 2-3 bay leaves
- 6-8 green cardamoms
- 2 inch cinnamon stick
- 2 black cardamoms
- 6-8 cloves
- 2 teaspoon coriander seeds
- 2 teaspoon fennel seeds
- 1 teaspoon cumin seeds
- salt (according to taste)

- 1 kilogaram basmati rice
- 2 medium onions, thinly sliced
- 3 tablespoons oil or ghee
- 2-3 bay leaves
- 3-4 green cardamoms
- 1 inch cinnamon stick
- 1black cardamoms
- 3-4 cloves
- 1 teaspoon coriander seeds
- 1teaspoon fennel seeds
- 1/2 teaspoon cumin seeds
- 1 teaspoons Garam Masala powder
- 250 gram Yogurt
- 6-8 Fresh green chilies
- Fresh mint for garnish
- salt (according to taste)
- water (as need)
Instructions:
Step NO 01:

Making the yakhni. first, you should wash the one-kilogram beef (with bone) carefully. then take a pot and add washed beef, two medium chopped onions, two-inch sliced ginger, six to eight cloves crushed garlic, two to three bay leaves, six to eight green cardamoms, cinnamon sticks of two-inches, two black cardamoms, six to eight cloves, two teaspoons of coriander, two seeds, two teaspoons of fennel seeds, one teaspoon of cumin seeds, salt (according to your taste) and five cups of water (or as need). place a pot on the stove on a high flame to bring a boil. once, the boil comes then reduce the heat from high to low and simmer until the meat is tender, it will take one or one and half a hours ( and twenty to twenty-five minutes for chicken)
When the meat is tender and juicy remove it from the pot. Strain the broth through a fine-mesh sieve, reserving the broth (yakhni) and the cooked meat separately.
Step NO 02:

Washing and soaking the rice. take a large pot to wash the rice. and put in one kilogram of basmati rice and wash the rice carefully under the running water until or unless it comes clean, soak the rice for at least thirty minutes and take it aside.
Step NO 03:

Making the yakhni pulao. Take a pot to saute the onions, pour the three tablespoons of oil or ghee, and heat it, then add the two medium thinly sliced onions and saute until golden brown color. add whole spices like two to three bay leaves, three to four green cardamoms, one inch of cinnamon stick, one black cardamom, three to four cloves, one teaspoon of coriander seeds, one teaspoon of fennel seeds, half teaspoon of cumin seeds, and one teaspoon of garam masala powder and saute for a few seconds until fragrant. After saute the whole spices add the cooked meat and 250 gram of yogurt to the pot and cook for five minutes or until the yogurt is incorporated.
Your masala for yakhni pulao is ready then add the soaked one kilogram of basmati rice to the pot stir gently rice with masala and pour the beef broth which is already made If needed, add more water. Bring the mixture to a boil on high flame then reduce the heat to low, cover the pot tightly, and simmer until the rice is cooked and the liquid is absorbed. when liquid is almost absorbed put the rice on dum which is a very low heat and cook for almost fifteen minutes. Fluff the rice with a fork. Garnish with fresh mint, and fried onions. Serve
